Elephant Foot Yam (સૂરણ)

A large, dense, rough-skinned subterranean tuber with a dark brown, bark-like exterior and pale cream-to-pinkish flesh. It has a hearty, starchy texture similar to potato when cooked and is used in curries (Suran Nu Shaak), stir-fries, deep-fried chips, and traditional dishes like Undhiyu and fasting meals. Rich in complex carbs, dietary fiber, and minerals. (It must be boiled with tamarind, lemon, or buttermilk before cooking to break down calcium oxalate crystals that cause throat itchiness).
